Mmmmmuesli bars

I just made the most delicious batch of muesli bars ever and wanted to jot down the recipe before I forget! I ate the first one this morning after a ride and YUM!

3 cups rolled oats
1/2 cup:
- dried cranberries
- sultanas
- chopped pitted dates
- chopped dried apricots
- walnuts (just crushed in the hand)
- slivered almonds
- sunflower seeds
- plain flour
1 tsp vanilla essence

Not sure if necessary:
1/4 cup raw sugar
2 tsp Not-egg (a vegan, gluten free, egg substitute in powder form)

Mix together in a big bowl with a wooden spoon, adding soy milk until the mixture is moist.

Spoon into a pyrex baking tray and bake for... a while. I'm always hit and miss with baking, I think I did about half an hour at 180 degrees and then pumped it up to 250 for ten minutes which made the outside dark and toasted. Watch it doesn't burn though (those cranberries really blacken fast!)

It held together beautifully when I chopped it up into bars, a little crumbly (you need to be able to eat it) but not too crumbly that it falls apart when you pick it up, and not the other way, too hard to bite.

I added the flour, soy milk and Not-egg because I've made batches before which just crumble to basically loose granola when you try to cut them, so I wanted some ingredients to bind it.

Now I've got a freezer stuffed with the bars and will be good for the next couple of months. No preservatives, artificial sweetners etc. Go forth and bake!
